It's Thirsty Thursday again. We're getting a snow storm here in Maine. Today's drink is actually not green its red of course! In honor of valentine's day, I whipped up this delicious and beautifully red smoothie for my family. My son also seems to be getting a cold, so I've packed this drink with vitamin C.
Beet Red C-Boost
2 small beets (or 1 large beet)
2 cups of frozen raspberries (fresh are great too, I like a cold smoothie)
2 oranges peeled
2 cups of non-dairy milk (I used coconut milk)
1 cup of frozen pineapple (again fresh is great, but I like it extra cold)
1/4 cup chia seeds

Mix all the ingredients in your Vitamix or high speed blender until smooth. If you are using a standard blender, you'll likely want to cut and steam the beets a bit to soften.
