Its COLD here in Maine! I try not to complain too much, because I chose to live in this state and LOVE this state, but man its been really cold.... Craving warm comfort food for this weekend, I dug up this recipe given to me by a dear friend. This is so yummy! Probably the best traditional meatloaf recipe I've tried. I like to serve this with baked or mashed potatoes and green beans :-) This is comfort food!! My kids love meatloaf which is a win. But if you're looking for something different or need to fancy the presentation for the kids, try rolling your meat mixture into balls pressing it into muffin tins. Cut your baking time by a 1/4 to 1/2 depending on your oven..just monitor the temp to 160 degrees. Remember that this recipe is designed for 2 meatloaves so if you aren't feeding a sports team, freeze the other loaf or set of individual loaves for another night!
