With such a short window to enjoy and explore, I find myself doing a lot of snacking in between all the fun, and I'm always looking for snack ideas that are simple and easy to prepare. While these are great for anyone in the family, these snacks are my personal favorites! Outshine Simply Yogurt Bars- These are new are SO yummy! Outshine uses simple and honest ingredients which I love! All of their bars are a perfect refreshing snack for a hot summer day! Also at the top of my list are their Fruit Bars, and Coconut Water Bars - I have good luck finding them at Walmart. Energy Balls- with so much summer fun and play, I always need some protein to keep me running with the kids. My energy balls are always my go-to pick me up snack. You can find my recipe here, and feel free to play around and make your own additions.. Lately I've been adding some raisins and chopped pecans- yum! Frozen Fruit Kabobs- These are easy to make and keep on hand in the freezer and the chocolate drizzle is a great touch! Head over to Super Healthy Kids for the recipe and note these are NOT just for kids! Smoothies- Not only are smoothies super refreshing during the summer heat, they are also extra tasty with so many amazing local ingredients in season and readily available. Go hit up the farmer's market and pick your own strawberries! You can find some of my smoothie recipes HERE - Note this really yummy treat pictured above is made with freshly picked strawberries and you can find the recipe here to give it a try! Black Bean & Corn Dip- When I'm in the mood for something a bit more savory my go to is my simple Black Bean & Corn Dip with Sweet Potato Tortilla Chips! The recipe I use is SO simple, and yet so good. Here it is: Empty one can of rinsed black beans, one can of rinsed corn into a bowl. Add in a few fresh tomatoes chopped. Now add in 1/4 cup quality olive oil, and 1/4 quality balsamic vinegar. Mix everything together. Add the end add in one chopped avocado and enjoy!!
