Its a dreary day here in Maine...Hope its nicer where you are! The boys and I are brightening up our day with a smoothie full of all sorts of yummy colors! :-) Here's our recipe:
2 peeled oranges
1 cup loosely packed spinach
1 banana (frozen ideal)
1 peeled and chopped large carrot (or 2 smaller ones)
1/2 raw beet (or whole small one if you love beets)
11/2 cups frozen pineapple
1 cup coconut milk
1 cup coconut water
2 tablespoons chia seeds (optional)
**Recipe makes 2 servings
Blend all the ingredients in your Vitamix or high speed blender until smoothe. If you're using a standard blender, chop your carrots and beets fine, and process with liquids and greens for a while prior to adding other ingredients.
