These bars are so good I literally can't make them fast enough! Seriously melt-in-your-mouth good!! It's no secret, I have a HUGE weakness for all things peanut butter and chocolate, and the traditional no bake cookies are delicious, but they are usually loaded with sugar and butter. I've been exploring different recipes and perfecting a version that satisfies the craving for the combination of my favorites and isn't loaded with yucky stuff. My 4.5 year old has also been asking for dessert lately (not sure where that came from.. I think it's left over from the holidays), so this seems like a great compromise and treat option. Note I've been making this recipe mostly as bars (because it's easier), but you can most definitely make cookies with this!
1 cup peanut butter (Organic Creamy preferred, you can also do half almond butter)
1/2 cup raw honey
1 1/4 cup dark chocolate chips/or choc chopped
1/2 cup coconut oil
1 teaspoon pure vanilla extract
2 cups rolled oats (I like Bobs Red Mill Gluten Free)
1 cup shredded unsweetened coconut
1/2 cup chopped nuts (any nuts will work- walnuts are my go to)
1/4 cup chia seeds (optional but recommended)
1/4 cup flax seeds (optional but recommended)
Start by adding peanut butter, honey, chocolate, and coconut oil in to a medium sized sauce pan and heating on low and stirring frequently.
Heat until mixture is completely melted and smooth, and then remove from heat and stir in remaining ingredients.
Pour the mixture into a 9x9 brownie pan (or whatever you have), cover and chill in the fridge until bars are completely hardened.
When your mixture has completely hardened you can cut out bars in whatever size you'd like! I usually store half of the bars in the fridge and put the other half in the freezer to pull out when we need a treat!!
If you want to make cookies with this recipe, simply line cookie sheets with parchment paper and use a tablespoon or mini ice cream/dough scoop to drop a spoonful of the mixture. You'll want to refrigerate for a couple hours until firm.
