![]() Ok, I'm not usually a pork chop person..,,don't get me wrong, I like pork its just typically in the form of bacon or slathered in BBQ sauce. Anyway, last night my husband requested pork chops, and while its not at the top of my list he was out lobstering all weekend in the snow, and not to sound like a cliché, but I figured he deserved a pork chop:-) Anyway, I knew if I was going to make a pork chop, it would have to have some sort or yummy maple glaze or sauce etc... After digging around, I made this recipe from all recipes (I liked the word easy in the title :-) ) and was quite pleased. I served these with my sweet potato puree (recipe below) and asparagus. A pretty good meal, and one that even my little eaters enjoyed (ok minus the 3.5 y/o eating asparagus :-) ).... Delicious Sweet Potato Puree 4 good sized sweet potatoes peeled and chopped A few hearty shakes of cinnamon about a 1/4 cup of milk give or take about a tablespoon of pure maple syrup 2 tablespoons of butter a few good shakes of salt Boil the sweet potatoes until soft. Combine all ingredients and in your food processor or high speed blender; I use my Vitamix. What did you cook up for dinner? Love hearing from you and love new recipes!
