In this house we love our energy balls- I always have some on hand. Typically I make my favorite ones with chocolate chips- (get the recipe here), but this winter I was inspired to make something a little more festive for the season. So here's my winter energy bites we're calling snow balls! 1 cup almond butter 1 cup old fashioned oats 1/4 cup honey 1 tablespoon pure maple syrup 2 tablespoons ground flax seed 1 teaspoon vanilla extract 1 (or 2) teaspoons of cinnamon cacao powder optional (if using I'd recommend 1/4 cup) 1/2 cup coconut In a bowl, mix all the ingredients except the coconut thoroughly. Roll into small (1 inch) balls. Put the coconut in a small bowl, and roll the balls in the coconut until they are coated. I line a cookie sheet with parchment paper and chill them in the fridge for an hour, then I store them in the fridge in a sealed container or freeze some for later. Happy Winter!! Enjoy! xx
