![]() Following my recent post about green smoothies, I've decided to start doing Thirsty Thursdays!! No, not what you remember from college ;-), these Thirsty Thursdays will leave you feeling energized! Each Thursday I'll share a favorite smoothie recipe (doesn't have to be green) and I hope you'll share yours with me! So today's recipe is one that I've adapted from a couple recipes I've tried on sarasullivan.com and Simple Green Smoothies... Its a yummy and refreshing drink (perfect to jump start your day). This recipe serves 2 (share with the family or freeze yummy popsicles for the kids) 1 cup coconut milk 1 cup coconut water 2 cups pineapple 2 cups spinach (feel free to use half kale) Juice from half a lime 1 tablespoon shredded coconut or coconut oil a handful of mint leaves 1 tablespoon ground flax seed (optional) 1 banana (optional) * I often leave this out ** If you like your smoothie cold like me, either use frozen fruit or add ice, I like to use 1 cup fresh pineapple and one cup frozen. I have been into green smoothies too lately! I love the sounds of this recipe. I'll have to try it. Sounds like a pina colada :)
