If you're looking for a quick and easy power breakfast, this is a great option full of fiber and goodness. It's filling and is a great base to get creative and add whatever you're craving. You can eat it with a spoon and add fruit & nuts or drink it up with favorite flavorings like pumpkin pie spice or cocoa powder. If you like it served chilled you can even make it the night before, though note you'll be eating it with a spoon as the chia seeds will gel up. Chia Power Smoothie/Breakfast 1 15oz can of organic coconut milk 1/4 cup coconut water (feel free to add more if you want a more drinkable consistency) 1/2 raw chia seeds (feel free to use less or more for desired consistency) 1 teaspoon real vanilla extract 2-3 tablespoons of real grade B maple syrup 1 tablespoon shredded raw coconut 1 tablespoon coconut oil (optional) pinch of sea salt Optional additions 1 teaspoon of cinnamon + 1 teaspoon of pumpkin pie spice (perfect for fall & winter) 1 tablespoon of raw cocoa powder I like adding a scoop of USANA Nutrimeal Vanilla bean mashed banana Put all your ingredients in your Vitamix or high speed blender and mix until smooth (it won't take long). Either serve immediately, chill in the fridge, or make at night and serve in the morning. Topping ideas 1/2 cup (or desired amount) of raw nuts- walnuts or almonds are great with this fresh berry toppings of your choice dried fruit such as cranberries, raisins etc..
