Missing vacation, I have Pina Coladas on the brain :-) This morning I blended up Pina Colada Smoothies for everyone and as you can imagine they were a huge hit! No green in these (but feel free to add some spinach) but this is definitely a bit healthier take on the warm weather treat!
Pina Colada Smoothie
1 cup coconut milk
1 cup coconut water (omit and use another cup of coconut milk if you desire a creamier texture)
2 cups frozen pineapple (if using fresh add 1 cup of ice cubes)
1 tablespoon coconut flakes
1 tablespoon coconut oil
1 tablespoon chia seeds (optional)
4 pitted medjool dates (if you don't have dates use 1 tablespoon of honey)
Blend all the ingredients until smooth in your vitamix or high speed blender. If you have it, garnish with a pineapple wedge. Serve and Enjoy. This recipe is 2+ servings.
