Happy Thursday! Hope you had a great day! We were so excited to see the sun shining in Maine today. I worked all afternoon/evening at our local farmers market, but before I left, I made us all one of our favorite smoothies. It's red, which is always a big hit in my house, but its also delicious and full of goodness. It gave me the extra boost I needed for a busy day. Note that I use my juicer with this recipe, but there are alternatives.
The juice from 1 medium beet, 2 medium/large carrots, and one orange
1 cup pineapple (I use frozen)
a good handful of strawberries
a good handful of spinach
a couple good squirts of honey
With your electric juicer, juice your beet, carrots, and orange. Mix the juice and all the ingredients in your Vitamix or high speed blender, a regular blender will work ok too. Blend until smooth.
**use coconut water or ice if need be to adjust consistency
***If you do not have a juicer you can look for natural store bought alternatives (looks for pure juice at your health food store). OR you can also wash and peel half a beet and 1 carrot and about 1 cup of coconut milk and put them all in your high speed blender with the other ingredients.. it won't be quite the same, but def. a good alternative.
