The boys and I were in need of a good snack today and I needed a good pick me up, so we made our favorite energy balls. Here's recipe we use:
1 cup of old fashioned rolled oats
1/2 cup peanut butter (or nut butter of your choice- I love combining almond butter & peanut butter)
1/3 cup honey
1/3 cup raw coconut
1/3-1/2 cup dark chocolate chips
1 teaspoon vanilla extract
1/4 cup chia seed
1/4 cup flax seed
1-2 tablespoons of coconut oil (note I use closer to 2)
Combine all the ingredients until mixed thoroughly. Roll into 1 inch balls and place on a cookie sheet lined with parchment paper or aluminum foil. Store in the fridge.
