So today's recipe is one that I've adapted from a couple recipes I've tried on sarasullivan.com and Simple Green Smoothies... Its a yummy and refreshing drink (perfect to jump start your day).
This recipe serves 2 (share with the family or freeze yummy popsicles for the kids)
1 cup coconut milk
1 cup coconut water
2 cups pineapple
2 cups spinach (feel free to use half kale)
Juice from half a lime
1 tablespoon shredded coconut or coconut oil
a handful of mint leaves
1 tablespoon ground flax seed (optional)
1 banana (optional) * I often leave this out
** If you like your smoothie cold like me, either use frozen fruit or add ice, I like to use 1 cup fresh pineapple and one cup frozen.
