Last week red, this week orange! My boys (esp. my 4 year old) love colorful smoothies (esp. a change from green) and its still a great way to pack in goodness and try new things.
Carrot Cake Smoothie
1 cup coconut milk (or almond milk)
1 banana (ideally frozen)
1 carrot peeled and chopped
2 pitted dates
1 tablespoon walnuts
1 tablespoon raw coconut flakes
1 tablespoon ground chia seeds (you can also used ground flax seed)
1/2 teaspoon cinnamon (or more to your liking)
1/2 teaspoon vanilla extract
1/8 teaspoon ground nutmeg (totally optional)
1/8 teaspoon ground ginger (totally optional)
4-5 ice cubes (or more to your liking)
Put all the ingredients in your Vitamix or high speed blender and blend until smooth. Note this is one serving, so you'll want to double if your sharing! :-) Enjoy!
