Its been hot here in Maine, and refreshing beverages are a must! No cocktails for me this summer, so I'm sharing a few of my favorite Mocktails.
white peach sangria is usually my summer go-to, so here is my version for this summer
3 cups seltzer
1 cup peach juice or nectar
1 cup sparkling white grape juice
1 cup frozen peach slices
**Combine the first three ingredients in a pitcher and gently stir. Add peach slices.
I love frozen drinks, they ooze vacation and relaxation
1 cup fresh pineapple juice
1/2 cup fresh cut pineapple
1/2 cup coconut milk
1/2 cream of coconut (if you don't have this use 1 cup coconut milk)
2 tablespoons sugar (optional)
1/4 cup raw coconut
**Add all ingredients to your Vitamix or blender and mix until smooth. Serve with pineapple garnish.
A slushy reminds be of being a kid- this recipe is super simple and something everyone can enjoy.
3 cups seeded watermelon
2 sprigs of mint leaves
2 good teaspoons of honey
juice from 1 lime
10+/- ice cubes
**Put ice in your Vitamix or blender and pulse until crushed. Then add in the other ingredients and mix for about a minute or until slushy.. (feel free to add more honey or a little sugar if you like it sweeter, and if you want to thin it out, add a little cold water. Adding ripe local strawberries is also a good twist).
