Back from vacation, and back to normal eating! We just did a grocery run and stocked up on some of our healthy favorites!
We love "bars" in this house; they are such an easy and portable snack that everyone in the house enjoys. I'm always looking for new recipes to make our own, and lately I've just been playing around with ingredients to find our favorite combination. Today, the boys and I made this recipe we created for the second time and have decided its our favorite so far. We are all devouring them! :-)
Yummy Homemade Energy Bars
1 cup walnuts
3/4 raw cashews
1/3 cup chia seeds
1/3 cup ground flax seed
1/3 cup coconut flakes
1/4 cup natural peanut butter
1 cup medjool dates pitted
1/2 cup raisins
1/4-1/3 cups cacao chips/nibs
(**tablespoon of coconut oil if the mixture is feeling too dry)
Put all the dry ingredients in your food processor or high speed blender for a few seconds then add in the remaining ingredients and process to your liking. I like to process for a while to break down the pieces and to give it a smoother texture. If you want a chunks for cacao vs the cacao blending with your base, then add the chips/nibs at the very end and process for a few seconds. Once the mixture is the consistency you like, dump it in to a small/medium pan lined with parchment paper. I layer another piece of paper on top and press down well to make the bars smooth. I refrigerate for a few hours before cutting. Once cut I store in the fridge. You can also freeze some and bring them out later.
